On the fly

I know everyone says not to burn on the fly but what is the difference. Does the back up play any worse than if it wasnt done on the fly, if so what are the faults.
Or is it just that the burn could fail on the fly?

Yes its the same. One process reads the disc while its in the tray, which can cause problems because the disc is being read while it is being burned. The other method is safer simply because it is being read from the HD which is faster.

Yeah depending on your burner sometimes you need to save to the HDD before being able to burn at full speed.
