I've just got BLEEM but how do I use it? Which files must I select?

the best piece of advice i can give u is get rid of bleem and get vgs1.41 as it's easy to configure and does not need a bios or epsxe which is the best psx emulator available!
you can download both at www.galeon.com/emurayden/playstation.html
