The capacitor will works as a spring.

The electrical signal will first "pull the spring" by filling the capacitor plates with voltage, once the plates are charged, the signal goes ahead to destination without the hard edges.

The "spring" effect smooths the signal and avoids fast movements. This same effect also filters (and eliminates) fast and short pulses, in a way, it protects the "signal receiver" part against those undesired pulses.
