Anyway to change the name of the EXE a trainer looks for?

Any thoughts about editing the process name a trainer is looking for?

Im sure it depends on what the trainer was written in but in general is there an app or a way to edit the process name?

A hex editor. However, usually trainers are compressed and/or encrypted so that it becomes harder to steal the idea of how the trainer modifies the game code. In that case, modifying the trainer becomes harder, too. If you send me the trainer executable in an email attachment (put it into a ZIP archive!), I'll have a look at it.
