Rip and replace PS2 music?
I own a copy of Capcom vs. Snk 2. If you have a copy as well, you know how much this game's music sucks. I know that it's possible to rip out music from games to make it fit to a CD. Now, is it possible to replace music to something else out of my mp3 collection? I'm guessing that the problem will arise when one tries to convert the mp3 into whatever file format PS2 uses.

Well find out what format they are in ...
Google for a converter. Rename your songs exactly in the song names of the crappy songs.

I've ripped Videos off some games with great success but never did music. The idea you have would be sweet. Sounds to good to be true but I'll be anxious to see if anyone has some knowledge on this..
