Cut it into parts with an MPEG(-2) stream editor (with e.g. MPEG2VCR or PVAstrumento) and then either convert the parts into XviD AVI's (with e.g. GordianKnot) or shrink & reauthor them into another DVD (with e.g. Nero Recode or Nero VisionExpress).
I don't quite understand what exactly you're trying to do. You might want to elaborate... For softwares and guides, see http://www.doom9.net.
