If you're having problems with your original CD/DVD, then RTFM, run Windows update, update your drivers, contact the publisher, read the official game support forum etc...

You should check out the PC troubleshooting section of http://www.gtaforums.com - its a freaking HUGE forum dedicated to the GTA series. It looks like there's already lots of tips there for crashes. You'd probably get a better answer there than here.

I'm an overclocker dude. Trust me, I know about the heat related crashes! I had 4.78 ghz on this CPU! It's a celeron D 2.4

Why do I play games on this gay system? Because doom 3 runs on max setting, so does any other fps including far cry, rome total war, boiling point, but this game lags all the sudden and crashes.

My system is 2.4 Celeron
geforce 6800 ultra 256 mb
4 gigs ocz ram ddr400, no heatspreaders
v7 mobo, from abit (all drivers updated)
no sound card
Sata controller card

Yet GTA runs slow as hell at max setting in the unplayable range! Hell boiling point ran great even and that is a bigger game plus better graphics, and even a memory leak which I belive they fixed now!

edit..................... GTA forums has my IP banned!!!!!! WTF?

Why do people overclock, not only does it stress out components, but OC'ing that CPU to a high clocking is really bad.

GTA:SA runs fine on mine on high settings.

Something not right on your end. Perhaps like most people your using perhaps a software soundcard (onboard) which doesnt work well on full acceleration. Try going into dxdiag and turning down the acceleration on sound to none.

Many overclock for the fun of it and sees it as a challenge... That was why I did it before but now I can't get the same rush... :P
Good overclocking rarely makes any component stressed out so badly it would die before any upgrade anyway...

My guess would be on that your CPU can't handle the overclocking to a 100% or has been damaged due to bad cooling when overclocking and maybe GTA SA is a bit more sensitive when it comes to slightly damaged CPU's?
So set all clockspeeds to original speed and try again... If that won't help check the drivers again and as a last resort check your hardware (especially the RAM) for possible damages...

I also overclock my system.

I have a:

Athlon64 3200+
1Gb Ram
6800 GT @ 425/1150 (past ultra)

Never had a problem with any games. Your overclock probably isnt causing it unless you have crap cooling. Have you made sure your nvidia drivers are up to date? Try the 77.50 drivers from www.guru3d.com

Also is your motherboards bios up to date & all your motherboard chipset drivers? 4Gb of ram will slow your system down, use 2Gb max if I were you. With 4Gb you're limiting your overclock & also it'll run slower. The more memory you have the longer it'll take to access. Get 1 or 2 Gb with good timings for best results. The only game that benefits from 2Gb over 1Gb at the moment is the battlefield 2 demo!!
