Well, I had order a PS2 adapter since 12-2, never received, it was sent again and NOT yet received! So, i haven't made any tests yet, but it seems logical to me like this.
Hook 3-4 PS2 on ONE PC, so you have a LAN with 4 PS2 and one PC. Each PS2 and the PC has its own IP.
So, for instance in THUG (it's the only game that i have that has online gaming) you boot thug in all PS2 and you make one PS2 running a server game and the other 3 act as "clients". Since you know which IP the server runs, each client PS2 tries to connect to the server PS2.
