I,m doing a lot of this myself go to the link below for the guides and links for the the programs that you will need.
http://www.vcdhelp.com/tmpgencdvd.htm The best thing to do is print out all the tutorials. I'm using tmpgenc to encode the video, virtual dub to extract the audio then i run the audio through besweet to convert it to ac3 or mp2. After that i use ifoedit to join the audio and video back together (mutiplex) . Then ifoedit again to convert the movie to vob files for burning to dvd. I use dvddecrypter for the burning. It might sound a bit involved but once you get used to following the guides providing the original avi's ,xvids etc are of good quality you can produce some really good dvd's.
