First off, only cd-rw's work (and some cd-r's, but I haven't had any that did work yet)
If the game is over 2 gig, then chances are that it can't be cut down. If it is about a gig, that it probably can. You have to replace the sound files with 3 second audio files (by renaming and deleting), and replace the movie files (ussually .bik) with a smaller movie file. If I were to rip a game, I'd look for something like the opening logo, it's ussually the smallest, and copy/rename it untill I replace almost all of the movie files. But I hope you can stand seeing the opening logo of the game 500 times.


As for multiple cd's...
OK, I dunno if this method would work. Theoretically, it would, but requires too much hacking which isn't worth the work. You would have to find all the files in the startup menu, and all the options/etc..., which would go on every cd you burn. Then you'd have to find every single file used in the levels (1-5, 5-10, etc..). You would burn the first few levels onto a cd, and put the next few exactly where you left off and saved. A little hard to explain and not worth it, since the loading times will be horribly bad.
