It says that you must copy all files from the DVD to folder PES2011_DVD5\PES2011 not to PES2011_DVD5. You've copied these files to PES2011_DVD5 folder and that's why you've got this error:

Yes, select the files mentioned in the tutorial, click on ADD button and set the values in the window that will appear to:

Output archive: PES_2011_arc.exe
Compression:    -mx -ld400m
Make EXE: Windows GUI: freearc.sfx

and click on OK or other button that means "Click on me to start making "PES_2011_arc.exe" archive

After all that i've told you, the setup should work although I might be wrong so keep me up to date
