Fable constantly loads, so if you haven't got a good dvd-rom it will try to read faster than it can on most backup disks. That is usually about the time the dirty disk error comes in. I had the same problem and was forced to play from an HDD.Unfortunately you won't find too many ways to fix this problem.
The only thing I can say is to make sure the time is set correctly, delete the save, and see if it works again. If you boot from evox first, make sure TSR is not set to debug. Your HDD is probably large enough to play the game from it. I'd just to that and remove it when you're finished.
