You have various possibilities burning dvd movie to dvd-r.

Either you use tool like DVDShrink to rip some extras, or leave the extras and compress the movie (i.e. reduce quality). The burn in to one dvd-r, e.g. with Nero.
Or you can use a tools, which lets you spread the dvd over 2 dvd-r's, e.g. DVDXCopy.

DVD X Copy works great, if you get XPress or Platinum, you don't have to split it across 2 discs. The website says there is a loss in quality if you do this but, I only sometimes notice it when I am watching my backups on my HDTV on 480p res.
