how would i create my own custom dvd

once i upload the videos i have to my pc and get them into avi form what do i do then to make my own dvds? i dont really want to make them mpeg and make a vcd on a dvd because it lowers the quality alot right? im fairly new to creating my own dvd with my own menu screen etc etc so what would i do. i have the avi file, basically what im asking is what steps do i take without murdering the quality to put them on a dvd and create my own menu screen and an area where i can add my own "special" features and stuff like that. i know it wont be easy but i want to learn, i just need to be pushed in the right direction. please help
