I wrote a small program call "cutbink" which keeps only the first N frames of a .BIK video file. Completely empty videos (0 frames) usually work but, if the game crashes because of that, you can also create one-frame videos instead. That gives you like a few ten kilobytes per video file instead of several (ten) Megabytes. (I use this program in my so-called "modular rips": mostly no videos - especially not intros! - are kept in the main module, if the game is well playable without them; instead, they are inside other, optionally installable, modules.)
