Having installed Windows Server 2003 on my computer, I must say I'm quite impressed. They're quite fast and much more reliable than XP, although I'm not sure that anybody would just install a Server version of Windows for just gaming.
Anyway, for resource-eating games, I use Win2003, mostly because I haven't hogged them with the little utility that does this and the other utility that does that, eating up my memory, and I found they're faster.
In general, I'd say try 2003. You might just like it.
