A ripkit is a program (or parameter file for a ripping program, depending on how they do it) that takes your DVD image (yeah you have to have the original DVD) and splits it up into CD images.
Some ripkits compress the video for you, others just delete the video and replace it with smaller versions. Still others do nothing but break up the files and patch the executable so it's happy running from 3 CD's instead of one DVD (I have a Deus Ex ripkit like that).
In theory anything is rippable, since the rip can in fact change the code. However, some things (DVD9 for example) are just too darn big and bulky, and some games are getting very tough to rip.
