As nobody else has bothered to reply, I'll throw my tuppence into the ring. Looks like a procurement spec. Anyway, here's my opinion given without guarantee nor any liabilty to myself whatsoever. For PS2 and PC Games copying, I use CloneCD and CDR-WIN and NOT any Adaptec product.

1. Full HD image backup/restore
ANSWER: Adaptec "TAKE TWO". I haven't tried it but am studying it.

2. Selective file and folder backup/restore
ANSWER: Adaptec Easy CD Creator or Nero

3. Support for backup "jobs" or "profiles" that I can run periodically.
ANSWER: Schedule this through Norton (I think)

3. Backup/restore from/to networked drives
ANSWER: So far as I know Adaptec Nero etc work with Network drives

4. Ability to use full read/write speed of CDRW
ANSWER: All CD-RW products do this either by manual setting or by testing the device and taking the decision for you

5. SW is provided by an "established" vendor who will be around for future upgrades and support.
ANSWER: Who knows. Adaptec is an established company. Their software is good for what you have requested but not for specialised applications. The specialised copy programs don't score on the hard disk image.
