And who has a NFS plug-ins for Adobe Photoshop 7.0-?

I don't think that it's legal to convert game music to mp3 files...
But I can help you with your plugin go here (http://developer.nvidia.com/object/nv_texture_tools.html)
I think the DDS Photoshop Plug-in is the right one (It has a red description).

Game Audio Player can, probably, play NFS:U's musics. If not, grab NFSU Music Extractor instead. Have fun,
