I've got the DC SunoCross Championship racing:
gen-snop.001----gen-snop.007 and gen-snop.sfv.

However, after I extracted these files, besides getting a
gen-snop.CDI(which is what I used to get all the time), I also got
track1.mp3 ----------- track15.mp3. I just don't know what to do with these track files...

I tried just to burn the gen-snop.CDI with discjunggler, and it didn't work on my DC. I know I gotta do something with the 15 track files, but just don't know how...

Thanks in advance...

The MP3s are the CDDA audio files of the release. You must convert them to .WAV and then use CDRWin (or the program you feel comfortable) to build the ISO.

I mean, after I convert the mp3s to Wavs, do I just make the whole thing to a ISO?(Cdi, wav, wav?)

I recently got another game KOF2k1 which contains

track1.wav 39mb
track2.wav 39mb
track3.tao 614mb

SHould I also "make" this to an ISO? And then burn it??

Thx a lot for your help!

Write the first audio tracks on the first session, but don't close it. After that write the data file, then close the disc.

Use the known echelon method, its apply if you are using CDRWin or the cdrecord linux / cigwin tools. Look for them, they're not hard to find. ;)
