The best way if you are a newbe: Play with ISTools :D it's the best workbench-like program for making an innosetup installer ;D
Or just look at the script for The Witcher2: Assassins Of the kings 2xdvd9 to 2xdvd5 conversion :) just look for image files in the script and you'll see:)

For THIS kind of installer:

I know, text is in Russian, but use the links to the forum to get the installers. They use FreeArc compression, but I don't know about multi-disk support - Or, at least, with .ARC files...
Anyway, you can always go to InnoSetup support page (http://freearc.org/InnoSetup.aspx) in FreeArc's webpage (http://freearc.org)!

The Starcraft 2 Installer uses unpacked game files, so it should be EASIER to create one.
And now, for THIS kind of installer:

Well... I couldn't say anything about the Crisis 2 custom installer, but the F.3.A.R one was done by Peterf1999.
Commonly, he creates "closed" installers - which should mean his custom installers are "closed source" (A.K.A. use the ones he provided to you. final period.). But you can try his Witcher 2 custom installer to do something like these F.3.A.R. installer above. Either this or the Darksiders one (http://fileforums.com/showpost.php?p=389664&postcount=1), which is simplier, yet functional enough to your needs.
(Notice that, if I shoudn't allowed to suggest using one of the Peterf1999 installers, then fine, I'll remove this part, as long as I'm advised to do so by peter himself.)

Being so, it's time to read a little... teh truly basics:

Just change minimal data (Like the game name, game version, source path, registry entries and change ALL AND EVERY occurence of the game's main files (Like the executable) so the script will work for the game you want.
Considering these "nearly done" scripts, your "edition work" is pretty, pretty LAZY.
Me, for example: When peterf1999 released his F1 2010 custom installer for a single DVD (http://fileforums.com/showthread.php?t=90391), it created a new media with ONLY ONE language.
With some changes (The ammount of files to be added and compressed, the compression level and such), I've modified his installer so we can save FIVE languages - Namely, English, Italian, German, French and Spanish (Japanese and... Polish? Russian? I forgot the another one... were "excluded". No problemo, even original installer cannot access them!)
I'm even considering the "mod" of The Witcher 2 custom installer so we can have some "even-more-state-of-art" installers for old peterf's projects - And even his permission to publish them here!
Believe in me, as long as you read the codes, you'll see it's NOT that hard to MODIFY - Really, you don't need to do anything super in the scripts posted above.
